Aim:  To enable the students to: Explain the biochemical background as well as methods and processes within a selection of biochemical and fermentation industries (associated to the food industry for instance). Obtain a solid knowledge of enzymology, including enzyme kinetics and industrial application of enzymes.
Contents:  Industrial applications of enzymes. Enzymatic breakdown of starch, protein and non-starch polysaccharides. Industrial enzyme applications: Baking, dairy, fruit juice, feed, detergents, pulp and paper. Industrial production of sugar, pectin, lipids. Wine and beer brewing. Enzymology: Enzyme classes, enzyme kinetics with one substrate. Stability of enzymes: Effect of pH, temperature etc. on enzyme kinetics. Immobilised enzymes.
