Aim: To enable the students to use and understand important equipments, methods, processes and theories, which are important elements in the technical fields of food industry.
Contents: Theoretical and practical handling and use of unit operations in the food industry. Heat transfer and heat sterilisation. Chemical microbiological and technical aspects of preservation and drying. Ultrafiltration of milk, production of smoked meat and refining of edible oil. Product formulation problems.
