Aim: The students is expected to aquire knowledge about headspace techniques. Volatile aroma compounds ara collected using different headspace methodologies and analysed using GC-MS. The production of aroma compounds is related to especially microbial activity and to lipid oxidation. |
Contents: Theoretical and practical basis for isolation of aroma components. Static and dynamic head space. Aroma collection using purge and trap, extraction and thermal desorption. GC-FID and GC-MS. The use of internal standard and Kovat's indices in identification. Design and statistical analysis of experiments using computer software. Aroma development related to lipid oxidation and microbial metabolisms is discussed, theoretically and in relation to simple meat or dairy products which are produced and aroma compunds collected. |
