Aim: To give a theoretical and practical grounding in understanding the interaction between fish as raw material, integrated quality assurance and process technology.
Contents: Primary production and global resources. Environment and the influence of the fish quality. Chemical, microbiological and sensory quality. Quality assurance of fresh fish and shellfish. Process technology and quality assurance in production of industrial species. Aquaculture, production of feed for aquaculture and quality of the product.
